50g mango
50g cucumber
25g ginger
a handful of fresh mint leaves
1/2 cup water
25g brown sugar cane block

  1. bring water to the boil, add the brown sugar and let it melt over a medium-high heat.
  2. meanwhile, finely grate the ginger and reserve the juice.
  3. when all sugar has melted, add the ginger juice, turn off the heat, mix and chill in fridge who cooled.
  4. chop the mango, cucumber and melon into small cubes, and finely chop the mint.
  5. now just bung everything together in the mixer til it’s smooth, easy!
decorate with some mint leaves, strawberries and melon pieces.
